Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt, set aside.
In a separate large bowl, combine sugar, coconut oil, pumpkin, vanilla and eggs with a whisk until light and fluffy.
Gently mix in dry ingredients until fully combined.
Stir in the chocolate chips.
Form 1 tablespoon sized balls and place approximately 8 cookies on each baking sheet. Sprinkle a little bit of sea salt on each cookie.
Bake for 10-12 minutes. Allow to cool for a few minutes before transferring to a cooling rack. Cookies stay fresh for a few days in an airtight container.
