Crispy, Juicy Baked Paleo Chicken Nuggets

Ingredients
  

  • 2 Chicken Breasts
  • 1 box Simple Mills Crackers
  • 2 eggs
  • Salt and Pepper

Instructions
 

  • Preheat oven to 425°
  • Cut the chicken breasts into cubes.
  • In one bowl, crack an egg; in another bowl: 1 box of crackers ground up into a flour-like consistency [use a blender or food processor], adding salt and pepper to taste.
  • One by one, dip each piece of chicken into the egg followed by the crackers and place onto a baking sheet covered with parchment paper. Bake for about 25 min.
  • A quick broil at the end makes them extra crispy!
