Preheat oven to 425°
Cut the chicken breasts into cubes.
In one bowl, crack an egg; in another bowl: 1 box of crackers ground up into a flour-like consistency [use a blender or food processor], adding salt and pepper to taste.
One by one, dip each piece of chicken into the egg followed by the crackers and place onto a baking sheet covered with parchment paper. Bake for about 25 min.
A quick broil at the end makes them extra crispy!
