Pumpkin Chocolate Sea Salt Cookies

Ingredients
  

  • 1 + 1/4 cup spelt flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 2/3 cup coconut sugar
  • 1 large egg room temperature
  • 1/2 cup coconut oil melted
  • 1/4 cup canned pumpkin
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips
  • Large sea salt flakes

Instructions
 

  • Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt, set aside.
  • In a separate large bowl, combine sugar, coconut oil, pumpkin, vanilla and eggs with a whisk until light and fluffy.
  • Gently mix in dry ingredients until fully combined.
  • Stir in the chocolate chips.
  • Form 1 tablespoon sized balls and place approximately 8 cookies on each baking sheet. Sprinkle a little bit of sea salt on each cookie.
  • Bake for 10-12 minutes. Allow to cool for a few minutes before transferring to a cooling rack. Cookies stay fresh for a few days in an airtight container.
