Crispy, Juicy Baked Paleo Chicken Nuggets
Ingredients
- 2 Chicken Breasts
- 1 box Simple Mills Crackers
- 2 eggs
- Salt and Pepper
Instructions
- Preheat oven to 425°
- Cut the chicken breasts into cubes.
- In one bowl, crack an egg; in another bowl: 1 box of crackers ground up into a flour-like consistency [use a blender or food processor], adding salt and pepper to taste.
- One by one, dip each piece of chicken into the egg followed by the crackers and place onto a baking sheet covered with parchment paper. Bake for about 25 min.
- A quick broil at the end makes them extra crispy!
