Double Chocolate Chip Cookie Skillet (Dairy-free, Gluten-free, Refined Sugar Free)
Ingredients
- 1 egg
- 3 tbs maple syrup
- 1/4 cup melted coconut oil
- 1/3 cup nut butter can sub any nut butter
- 1 tsp vanilla extract
- 1 tbs dairy-free milk almond, coconut, etc
- 1 cup almond flour
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 cup chocolate chips or sub 1/2 a chopped chocolate bar
- 1/4 tsp sea salt
Instructions
- Preheat oven to 325F
- Whisk together the egg, melted coconut oil, maple syrup, vanilla extract, and nut butter
- stir in almond flour, baking soda, cinnamon, and salt.
- fold in the chocolate chips/chunks.
- Lightly spray an 8in cast iron skillet and pour the batter in, spreading evenly with a silicone spatula.
- Place into the oven for 19 minutes and then switch to broil and bake for another 1-2 minutes until golden brown
- enjoy with ice cream or all by itself!
