Zucchini Noodle Shakshuka

Ingredients
- 1 tbs olive oil
- 1 zucchini, spiralized
- 14 oz can of crushed tomatoes
- 1 tbs harissa (can sub any hot sauce)
- 1/4 tsp paprika
- 1/2 tsp coriander
- 1/2 tsp garlic powder
- 1 tsp cumin
- 2-4 eggs
- cilantro
Instructions
- In a 10in cast iron skillet, heat the olive oil on medium heat.
- Sauté the zucchini noodles for about 2 minutes.
- Add the tomatoes, harissa/hot sauce and spices and bring to a low simmer.
- Create two small wells in the sauce, cracking one egg into each.
- Cover and let cook until egg whites are cooked through. Garnish with cilantro and avocado. Serve with toast, if desired.
