Zucchini Noodle Shakshuka

 

Zucchini Noodle Shakshuka

Serves: 1-2
Ingredients
  • 1 tbs olive oil
  • 1 zucchini, spiralized
  • 14 oz can of crushed tomatoes
  • 1 tbs harissa (can sub any hot sauce)
  • 1/4 tsp paprika
  • 1/2 tsp coriander
  • 1/2 tsp garlic powder
  • 1 tsp cumin
  • 2-4 eggs
  • cilantro
Instructions
  1. In a 10in cast iron skillet, heat the olive oil on medium heat.
  2. Sauté the zucchini noodles for about 2 minutes.
  3. Add the tomatoes, harissa/hot sauce and spices and bring to a low simmer.
  4. Create two small wells in the sauce, cracking one egg into each.
  5. Cover and let cook until egg whites are cooked through. Garnish with cilantro and avocado. Serve with toast, if desired.
