Turn the pressure cooker on and set to sauté and medium heat.
Add the olive oil to the pot and allow to heat for one minute
Add the ground turkey, breaking up into smaller pieces with a wooden spoon, until fully browned.
Add in the diced bell pepper, onion and jalapenos and cook until they start to become tender.
Add in the marinara sauce, diced tomatoes, spices, and chicken broth, stirring everything to combine.
IMPORTANT: Add the rice by sprinkling it on top of the mixture but do not stir.
Close the lid and set to high pressure for 12 minutes. Allow to cook and then vent the pressure before opening the pot. Once the pressure is released, open the lid and give everything a big stir.
Serve with tortilla chips, lettuce, cilantro, lime, hot sauce and cheese.
