Vanilla Bean + Cinnamon Roasted Japanese Sweet Potato Fries with Dairy-free Honey Butter Dip

Total time: 30 mins
Ingredients
  • 2 large japanese sweet potatoes, sliced length wise into fries
  • 1 tbs avocado oil
  • 1 tsp vanilla bean powder
  • 1 tsp cinnamon
  • Sea salt
  • 1 tbs honey
  • 1 tbs almond butter
  • 1 tbs ghee, clarified butter (a dairy-free version of butter)
  • 1 tsp cinnamon
Instructions
  1. Preheat oven to 400 degrees.
  2. Coat sweet potato fries with avocado oil, season with vanilla bean powder, cinnamon and sea salt.
  3. Bake for 30 min. While the fries are cooking, combine the cinnamon, honey, almond butter, and ghee (melting can make this easier).
  4. Serve the fries hot or cold with the honey-butter dip.

    We made the sweet potatoes and the dipping sauce tonight. We thoroughly enjoyed both, especially the dipping sauce!!! Super easy, super quick, and super delicious!!! Highly recommend this recipe!!!
