Unstuffed Bell Pepper (Easy 15 Minute Pressure Cooker Recipe)
This recipe comes together in less than 30 minutes and serves a crowd. It's full of veggies, protein and flavor, which makes for the perfect meal in my book. Gather all of your favorite toppings to create the easiest taco bowl.
Equipment
- 1 Pressure Cooker (Instant Pot, Ninja Foodi, etc.)
Ingredients
- 1 whole red bell pepper, diced
- 1 whole green bell pepper, diced
- 1 whole red onion, diced
- 1 whole jalapeno, seeds removed and diced
- 1 lbs ground turkey
- 1 tbs olive oil
- 2 cups marinara sauce Rao's is our favorite
- 1 10oz can Diced tomatoes & Green Chilies Rotel is our favorite
- 1.5 cups uncooked white rice do not substitute
- 2 cups chicken broth water also works fine
- 1 tsp chili powder
- 1 tsp seasoning salt Tony Chacheres's, Etc.
- 1 tsp garlic powder
Instructions
- Turn the pressure cooker on and set to sauté and medium heat.
- Add the olive oil to the pot and allow to heat for one minute
- Add the ground turkey, breaking up into smaller pieces with a wooden spoon, until fully browned.
- Add in the diced bell pepper, onion and jalapenos and cook until they start to become tender.
- Add in the marinara sauce, diced tomatoes, spices, and chicken broth, stirring everything to combine.
- IMPORTANT: Add the rice by sprinkling it on top of the mixture but do not stir.
- Close the lid and set to high pressure for 12 minutes. Allow to cook and then vent the pressure before opening the pot. Once the pressure is released, open the lid and give everything a big stir.
- Serve with tortilla chips, lettuce, cilantro, lime, hot sauce and cheese.
