The Easiest Way to Prepare Sweet Potato Toast

Ingredients
- 1 medium sweet potato, preferably long not wide
- Avocado oil spray
- Pinch of salt
- Toppings of choice
Instructions
- Preheat oven to 400 degree F.
- Cut the ends off of the sweet potato, then slice vertically down making long slim cuts
- Place onto a baking sheet and coat with oil spray and a pinch of salt.
- Bake for 20 min, flipping halfway.
- Store in the fridge overnight for a quick breakfast, or prepare immediately.
- If choosing to eat leftover, I don’t find it necessary to reheat but if you choose to, I would suggest using a skillet.
- Top with your favorite toast toppings, I love avocado or banana the best!
