The Easiest Way to Prepare Sweet Potato Toast
Cook time: 20 mins
Total time: 20 mins
Serves: 1
Ingredients
  • 1 medium sweet potato, preferably long not wide
  • Avocado oil spray
  • Pinch of salt
  • Toppings of choice
Instructions
  1. Preheat oven to 400 degree F.
  2. Cut the ends off of the sweet potato, then slice vertically down making long slim cuts
  3. Place onto a baking sheet and coat with oil spray and a pinch of salt.
  4. Bake for 20 min, flipping halfway.
  5. Store in the fridge overnight for a quick breakfast, or prepare immediately.
  6. If choosing to eat leftover, I don’t find it necessary to reheat but if you choose to, I would suggest using a skillet.
  7. Top with your favorite toast toppings, I love avocado or banana the best!
