The Easiest Vegan Mac & Cheese

This is the easiest mac and cheese you’ll ever make and it’s all because of Good Foods Plant Based Queso Style Dip! I am OBSESSED with this stuff on literally everything. Heat it up and eat it with tortilla chips, drizzle it on top of tacos, it’s even good as a veggie dip. The ingredients are 100% real food, no junk! You can find them at all Target stores.

Ingredients:

  • 1 box of your favorite style noodle
  • 1 container of Good Foods Plant Based Queso Style Dip
  • 8oz portobello mushrooms, sliced
  • 2 handfuls of spinach
  • 1 tbs avocado oil
  • salt and pepper

Directions:

  1. Boil water in a large pot, pour in the pasta and cook according to package instructions.
  2. While the pasta is cooking, heat the avocado oil in a medium sized skillet. Add the mushrooms and cook 2-3 minutes then add in the spinach and cook until wilted.
  3. Once the noodles are done, add the queso dip to the pot and stir to combine. Then add the spinach/mushroom mixture, stirring again to combine.
  4. Salt and pepper to taste. Serves 4 small bowls or 2 large.
