This is the easiest mac and cheese you’ll ever make and it’s all because of Good Foods Plant Based Queso Style Dip! I am OBSESSED with this stuff on literally everything. Heat it up and eat it with tortilla chips, drizzle it on top of tacos, it’s even good as a veggie dip. The ingredients are 100% real food, no junk! You can find them at all Target stores.
Ingredients:
- 1 box of your favorite style noodle
- 1 container of Good Foods Plant Based Queso Style Dip
- 8oz portobello mushrooms, sliced
- 2 handfuls of spinach
- 1 tbs avocado oil
- salt and pepper
Directions:
- Boil water in a large pot, pour in the pasta and cook according to package instructions.
- While the pasta is cooking, heat the avocado oil in a medium sized skillet. Add the mushrooms and cook 2-3 minutes then add in the spinach and cook until wilted.
- Once the noodles are done, add the queso dip to the pot and stir to combine. Then add the spinach/mushroom mixture, stirring again to combine.
- Salt and pepper to taste. Serves 4 small bowls or 2 large.
