Canned Pumpkin – the perfect substitute for oil, making this not only a healthier alternative, but a fun way to get your veggies in. Don’t worry, you can’t taste it!
Honey – My favorite sweetener to use in baking. It adds a distinct flavor and sweetness to the brownies without adding to much sugar.
Almond Butter – When I was a kid, my mom would give me almond butter instead of peanut butter to bring to school. The other kids thought I was weird, but it looks like now they’ve all caught up with me. This alternative to peanut butter works wonders in baked goods and acts as a replacement for both oil and flour in this recipe. It adds a slightly nutty flavor without being too strong.
Eggs – You can use a flax egg in this recipe for a vegan option, it just won’t rise as much.
Cocoa powder – What is a brownie if it doesn’t have a good amount of chocolate?

Ingredients
- 1/2 cup canned pumpkin
- 1/2 cup almond butter
- 1/3 cup honey
- 1 egg
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1 tsp vanilla
- 1/4 tsp cinnamon
- Pinch of salt
- Wilton’s Naturally Flavored Rich Chocolate Icing
- Wilton’s Naturally Flavored Confetti Sprinkles
Instructions
- Preheat oven to 350F. Grease a square baking dish with oil, or lay parchment paper down into the dish.
- Combine pumpkin, almond butter, honey, vanilla and egg into a medium sized bowl, whisking to combine.
- Add in the cocoa powder, baking soda, cinnamon and salt, stirring to combine.
- Pour mixture into the prepared baking dish and transfer to the oven for 22-25 minutes or until a toothpick comes out clean.
- Allow to cool for at least an hour, then spread a thick layer of icing on top of the brownies. Adding sprinkles on top. Cut into 9 squares and serve with ice cream for a fun treat!
