Shrimp Cauliflower Fried Rice

Shrimp Cauliflower Fried Rice
Cook time: 20 mins
Total time: 20 mins
Serves: 4
Ingredients
  • 1 container of riced cauliflower (or one head pulsed in a food processor)
  • 1 cup diced carrots
  • 1 diced onion
  • 1/2 cup coconut aminos (or soy sauce)
  • 1-2 tbs avocado oil
  • 1 tbs sesame oil
  • 1 tbs rice vinegar
  • 1 tsp sriracha
  • 1 tsp ground ginger
  • 1 tsp salt
  • 1 tsp garlic powder
  • 2 eggs
  • 1 lbs shrimp
  • Green onions
  • Sesame seeds
Instructions
  1. Shrimp Cauliflower Fried Rice:
  2. Heat a skillet on medium-high with 1 tbs avocado oil.
  3. Add diced carrots + diced onion and sautéed until tender
  4. Add cauliflower rice and stir for about 5 min, adding ground ginger + salt + garlic powder
  5. Push the cauliflower to one side on the pan, crack two eggs into the pan and scramble. Stir into the cauliflower once cooked
  6. In a small bowl, whisk coconut aminos + sesame oil + rice vinegar + sriracha. Then pour over the rice
  7. Set cauliflower rice aside and heat another skillet with avocado oil. Add shrimp to the pan, cooking 2 min each side
  8. Serve with fresh green onions + sesame seeds (and more sriracha! )
