Shrimp Cauliflower Fried Rice

Ingredients
- 1 container of riced cauliflower (or one head pulsed in a food processor)
- 1 cup diced carrots
- 1 diced onion
- 1/2 cup coconut aminos (or soy sauce)
- 1-2 tbs avocado oil
- 1 tbs sesame oil
- 1 tbs rice vinegar
- 1 tsp sriracha
- 1 tsp ground ginger
- 1 tsp salt
- 1 tsp garlic powder
- 2 eggs
- 1 lbs shrimp
- Green onions
- Sesame seeds
Instructions
- Shrimp Cauliflower Fried Rice:
- Heat a skillet on medium-high with 1 tbs avocado oil.
- Add diced carrots + diced onion and sautéed until tender
- Add cauliflower rice and stir for about 5 min, adding ground ginger + salt + garlic powder
- Push the cauliflower to one side on the pan, crack two eggs into the pan and scramble. Stir into the cauliflower once cooked
- In a small bowl, whisk coconut aminos + sesame oil + rice vinegar + sriracha. Then pour over the rice
- Set cauliflower rice aside and heat another skillet with avocado oil. Add shrimp to the pan, cooking 2 min each side
- Serve with fresh green onions + sesame seeds (and more sriracha! )
