Pomegranate with Dried Mint and Sea Salt
I thank my Persian husband for this recipe. I've always love pomegranate but the first time I had a bite of it prepared this way - MY LIFE CHANGED. There is something about the way the mint and sea salt bring out the sweetness of the pomegranate that just makes it POP! Make this for a sweet treat or appetizer when you have guests over and they will surely be impressed. Best part is - its really really easy!
Ingredients
- 1 Pomegranate
- 2 tsp dried mint
- 1 tsp sea salt (or to taste)
Instructions
- Cut the pomegranate in half (or skip steps 1-3, if using store bought arils)
- Working over a bowl, take a large spoon and hit the back of the pomegranate half several times. The arils will fall out into the bowl. Turn the pomegranate and continue until all the arils are extracted.
- Pick out any membrane that fell into the bowl, leaving only clean arils. Feel free to rinse and drain, if needed.
- Add mint and salt to the bowl, stirring to evenly distribute.
- Chill until ready to serve.
