Paleo Morning Glory Muffins

Ingredients
- 1/3 cup melted coconut oil
- 1/3 cup honey
- 2 eggs
- 2 tsp vanilla
- 1 + 1/4 cup of almond flour
- 2 tbs coconut flour
- 1/2 tsp baking soda
- 1/8 tsp salt
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 cup grated carrot
- 1/2 cup raisins
Instructions
- Preheat oven to 350F, line a muffin tin with paper liners or spray with cooking oil.
- In a medium sized bowl, combine: the palm oil, honey, eggs and vanilla. Set aside.
- In a different larger bowl, combine: the almond flour, coconut flour, baking soda, salt, cinnamon and ginger. Add the wet ingredients into the dry.
- Fold in 1/2 cup grated carrot + 1/2 cup raisins.
- Bake for 20-25minutes or until a toothpick comes out clean.
