Grapefruit + Beet Arugula Salad with Pistachios and a Super Simple Dressing

Ingredients
- 1/2 a peeled grapefruit, segmented and taken out of the membranes
- 1 plain beet, sliced (I like Love Beets)
- 1 Tbs pistachios
- 1 Tbs almond milk ricotta (can use any cheese)
- 2 cups arugula
- Juice of 1/2 a grapefruit
- 1/2 tbs olive oil
- salt and pepper to taste
Instructions
- Place arugula in a medium sized bowl. Add the peeled grapefruit and beets
- In a small bowl, whisk together the grapefruit juice, olive oil, salt and pepper. Then pour onto the salad and toss gently.
- Top the salad with pistachios and almond milk ricotta. Enjoy with a side of protein, like grilled chicken.
