Greek Garlic Stuffed Olive Lamb & Turkey Meatballs

Garlic Stuffed Olive Gyro Lamb & Turkey Meatballs
Prep time: 5 mins
Cook time: 20 mins
Total time: 25 mins
Serves: 6-8
Ingredients
  • 1 tbs avocado oil
  • 1 lbs ground lamb (or sub beef)
  • 1 lbs ground turkey
  • 1.5 cups almond flour
  • 1 egg
  • 1 small jar of garlic stuffed olives, sliced (about 1-2x meatball)
  • 1/4 tsp each of dried oregano and dried thyme
  • 1/2 tsp each of garlic powder and onion powder
  • 1 tbs of red wine vinegar
Instructions
  1. Preheat the oven to 350 degrees.
  2. Heat the avocado oil in a 12-in cast iron skillet over medium heat.
  3. Combine all ingredients in a large bowl and form into balls (approximately 24 total).
  4. Place into the skillet and cook for 3 minutes each side, until browned. Then transfer to the oven for 15 min.
  5. Serve with pasta sauce and noodles, lentil soup, etc.
