Garam Masala Roasted Carrot with Ricotta + Pumpkin Seeds

Garam Masala Roasted Carrot with Ricotta + Pumpkin Seeds
Cook time: 30 mins
Total time: 30 mins
Ingredients
  • 1 lbs whole carrots, peeled with ends cuts off
  • 1/2 tbs garam masala seasoning
  • 1 tbs avocado oil
  • Salt and pepper
  • Ricotta (I like Kite Hill almond milk ricotta for a dairy-free alternative)
  • Pumpkin seeds
Instructions
  1. Preheat oven to 400 degrees.
  2. Coat carrots in avocado oil and season with garam masala, salt and pepper.
  3. Bake for 30-45 minutes depending on the thickness of the carrots. To reduce the time in half, cut the carrots in half prior to cooking.
  4. Serve with ricotta cheese and pumpkin seeds.
