Garam Masala Roasted Carrot with Ricotta + Pumpkin Seeds

Ingredients
- 1 lbs whole carrots, peeled with ends cuts off
- 1/2 tbs garam masala seasoning
- 1 tbs avocado oil
- Salt and pepper
- Ricotta (I like Kite Hill almond milk ricotta for a dairy-free alternative)
- Pumpkin seeds
Instructions
- Preheat oven to 400 degrees.
- Coat carrots in avocado oil and season with garam masala, salt and pepper.
- Bake for 30-45 minutes depending on the thickness of the carrots. To reduce the time in half, cut the carrots in half prior to cooking.
- Serve with ricotta cheese and pumpkin seeds.
