Egg-in-a-Hole or Whatever You Call It

Ingredients
- 2 slices of gluten free toast
- 2 eggs
- 1 tsp Ghee, or clarified butter
- Salt and Pepper to taste
Instructions
- Heat the ghee in a skillet on medium heat
- Using a knife, or cookie cutter, create holes in the middle of each toast.
- Place the toast in the skillet and then crack an egg into the holes.
- Allow to cook, covered on low for about 3 minutes, until the whites are fully cooked. Alternatively, you can simply cook on each side for about a minute each.
- Don’t forget to add the cut out circles to the pan while the eggs cook.
- Serve with salt and pepper
