Easy 30-Minute Homemade Chicken Noodle Soup Recipe

Ingredients
- 4 carrots, peeled and sliced
- 4 celery sticks, sliced
- 1 bunch of green onion, sliced
- 1 yellow onion, diced
- 8 chicken broth (can sub water if needed)
- 1 pound chicken breast
- 1 tsp dried dill
- 1 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 2 bay leaves
- 12 oz of egg fettuccine (can sub other noodles)
- 1 lime, juiced (more for serving)
- Cilantro, for servings
Instructions
- Add 8 cups of chicken broth or water to a large pot. Add in the chicken breast and bring to a boil.
- Peel the carrots and slice. Then slice/dice the celery, green onions and yellow onion.
- While the chicken boils, heat olive oil in a skillet on medium heat. Once the pan is hot, add the chopped vegetables. Cook until tender.
- Then add dried dill, cook for about a minute then remove the pan from heat.
- Combine salt, turmeric, garlic powder and pepper to a small bowl. Then add to the pot with bay leaves. Let cook for 10 minutes.
- Remove the chicken from the pot and place in a bowl. Then add the cooked veggies into the pot.
- Shred the chicken using two forks then add back to the pot
- Add the noodles and let cook 15 minutes. Once the noodles are done, squeeze the lime into the pot. Serve with extra limes and cilantro.
