Easy 30-Minute Homemade Chicken Noodle Soup Recipe

Serves: 4
Ingredients
  • 4 carrots, peeled and sliced
  • 4 celery sticks, sliced
  • 1 bunch of green onion, sliced
  • 1 yellow onion, diced
  • 8 chicken broth (can sub water if needed)
  • 1 pound chicken breast
  • 1 tsp dried dill
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 12 oz of egg fettuccine (can sub other noodles)
  • 1 lime, juiced (more for serving)
  • Cilantro, for servings
Instructions
  1. Add 8 cups of chicken broth or water to a large pot. Add in the chicken breast and bring to a boil.
  2. Peel the carrots and slice. Then slice/dice the celery, green onions and yellow onion.
  3. While the chicken boils, heat olive oil in a skillet on medium heat. Once the pan is hot, add the chopped vegetables. Cook until tender.
  4. Then add dried dill, cook for about a minute then remove the pan from heat.
  5. Combine salt, turmeric, garlic powder and pepper to a small bowl. Then add to the pot with bay leaves. Let cook for 10 minutes.
  6. Remove the chicken from the pot and place in a bowl. Then add the cooked veggies into the pot.
  7. Shred the chicken using two forks then add back to the pot
  8. Add the noodles and let cook 15 minutes. Once the noodles are done, squeeze the lime into the pot. Serve with extra limes and cilantro.
