Cilantro Chipotle Lime Cauliflower Rice

Ingredients
- 1 tbs avocado oil
- 2 cloves garlic
- 1 container of riced cauliflower (or one head of cauliflower pulsed in a food processor)
- 1 tbs lime juice
- 2 tbs vegetable broth
- 1 tsp chipotle powder
- 1 bunch of cilantro leaves
- salt and pepper to taste
Instructions
- Heat a skillet on medium heat with avocado oil, add minced garlic and allow to cook for 30 seconds.
- Add the riced cauliflower + lime juice + vegetable broth + salt and pepper and allow to cook for 5 minutes
- Add cilantro + chipotle pepper and stir to combine
- Enjoy!
