Cilantro Chipotle Lime Cauliflower Rice

Cilantro Chipotle Lime Cauliflower Rice
Cook time: 5 mins
Total time: 5 mins
Serves: 4
Ingredients
  • 1 tbs avocado oil
  • 2 cloves garlic
  • 1 container of riced cauliflower (or one head of cauliflower pulsed in a food processor)
  • 1 tbs lime juice
  • 2 tbs vegetable broth
  • 1 tsp chipotle powder
  • 1 bunch of cilantro leaves
  • salt and pepper to taste
Instructions
  1. Heat a skillet on medium heat with avocado oil, add minced garlic and allow to cook for 30 seconds.
  2. Add the riced cauliflower + lime juice + vegetable broth + salt and pepper and allow to cook for 5 minutes
  3. Add cilantro + chipotle pepper and stir to combine
  4. Enjoy!
