These chunky walnut banana bread muffins are super easy to make and super delicious! They are perfect for breakfast with coffee or for dessert after dinner. Honestly, they’re even good as a pre-workout snack. I love to make these when I have super ripe bananas hanging out in the kitchen that I know I won’t eat unless I bake them into some muffins.

Chunky Walnut Banana Bread Muffins

The Best Banana Bread with lots of walnuts!
Ingredients
- 3/4 cup of sugar
- 1/2 cup softened butter (can sub vegan butter)
- 3 bananas, mashed
- 2 eggs
- 1 tsp vanilla
- 1.5 cups of All-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350°F. Prepare a muffin pan with paper liners or just a quick spray of oil.
- Using a standing mixer or a large bowl, first cream together the butter and the sugar.
- Next add the vanilla, bananas (mashed in another bowl if not using a mixer) and eggs to the bowl and stir/mix into the batter.
- Then add in the flour, baking soda and salt, stirring/mixing into the batter
- Fold in the walnuts and then pour batter into the prepared muffin pan. Place in the oven for 25 min – 30 min based on whether or not you can stick a toothpick in one of the muffins and it come out clean. Enjoy!!
