This avocado pesto cauliflower rice with blistered tomatoes makes for the perfect side dish to relatively any meal. It comes together in about 10 minutes and tastes great warm or cold. INGREDIENTS:
1 package of riced cauliflower
1 tbs avocado oil
1/2 cup cherry tomatoes
1/2 cup of Good Foods Avocado Pesto Plant Based Dip
DIRECTIONS:
- Heat oil in a large skillet on medium-high, add the riced cauliflower and cook for 5-7 min, stirring frequently.
- Once tender, transfer the cauliflower to a large bowl.
- Add a little more oil to the skillet along with the cherry tomatoes, allow to cook on medium-low heat until blistered. Transfer to the bowl with the cauliflower rice.
- Add the Good Foods Avocado Pesto Plant Based Dip to the bowl, stirring until the caulirice is completely coated.
- Serve hot or cold for a quick and easy holiday side dish!
