This Avocado Mash Breakfast Sandwich has been my go to meal before heading off to work because it’s so simple and delicious 👌🏼 I love Good Foods NEW avocado mash because it’s just sea salt, black pepper, lemon juice and lots perfectly ripe mashed avocado. They also come in portioned singles so you can bring them with you on the go. You can find them at Costco, Publix, Walmart & select Sprouts stores. (you can always check the store locater on Good Foods website to make sure)
2 slices of GF bread
1 package of Good Foods avocado mash
1 egg (a boiled egg works great if you’re on the go)
1 tsp avocado oil, butter, etc.
Spinach
1 tomato sliced
red pepper flakes
- Heat a cast iron skillet on medium-high heat with a tsp of oil.
- Pop the bread into the toaster. Then crack the egg into the skillet and cook until the white is fully done.
- Once the bread is toasted, smear a container of avocado mash on one side of the bread.
- Add sliced tomatoes, spinach and the fried egg (or boiled egg).
- Sprinkle with red pepper flakes. Option to eat open face or to smash the two slices together for the ultimate breakfast sammie
