Ingredients
- 1 egg, whisked
- 1 banana, mashed
- 3 tbs coconut flour
- 1/2 tsp baking powder
- 1/2 cup blueberries (optional)
Instructions
- Combine all ingredients in a bowl, folding the blueberries in last.
- Form into pancakes in hands.
- Place onto a skillet on LOW heat and COVER with a lid, letting cook for 3-4 mins on each side.
- Serve with fresh fruit!
